Cajun Shrimp with Linguini
1 Lb. Linguini
1 16 oz. jar of Spaghetti Sauce
2-3 Tbs. of Extra Virgin Olive Oil
3 Tbsp. of Pine Island Herb and Spice Cajun Blend
8 oz. of cleaned Shrimp
In a large sauce pan, add 2-3 tablespoons of the olive oil and 3 Tbsp. of Cajun spices. Sauté for about one minute, add spaghetti sauce and simmer for about 5 minutes. Add the shrimp and simmer for 5 minutes longer till shrimp are cooked through. Meanwhile cook linguini according to the package directions, being sure not to over cook the pasta. Serve over the pasta with lots of freshly grated parmesan cheese. I f you are using frozen shrimp that are already cleaned just place them directly into the simmering sauce, do not defrost, just simmer a bit longer until done. If you like your sauce with a little more kick, add a bit more seasoning, but remember the magic words " you can put more in, but you can't take it out!!"
