2 cups Complete Buttermilk Pancake Mix
1 cup Skim Milk
1 tablespoon Kansas City Roasted Corn Seasoning
1 cup corn (about 3 shucked cooked ears of corn)
1/2 cup red pepper, diced
1/4 cup scallions, chopped
Dash of hot sauce
Add milk and Kansas City Corn Seasoning to Pancake batter, stir to combine. Gently fold in corn, red pepper, and scallions. Add a dash of hot sauce (optional)
Add 1 tbs oil to a skillet on the stove top over medium heat. Add approx 1/2 cup of batter to form a 6" fritter. Cook till lightly browned, flip, and brown other side. Serve with low fat sour cream.
