Lemon and Herb Chicken
4 chicken breasts deboned and skinned
1/4 cup flour
4 TBS butter
1 cup chicken stock
salt and pepper to taste
Mix the flour and 2 TBS of the Zesty Lemon and Herb Blend together on a flat dish. Dredge the chicken breasts with the flour mixture, until it is thoroughly coated. Meanwhile melt the butter in a medium sized skillet and sauté the breasts for about 4 minutes on each side. Remove the breast to a separate plate. Add another TBS butter and chicken stock and one more tbs of the Zesty Lemon and Herb Mix. Bring the temperature to high, stirring frequently for about 1 minute. Add the chicken breasts and simmer for about 4-5 minutes, until sauce is thickened. I love this served with rice, brown or white.
