Pumpkin Tin Can Bread

3 cup sugar 1 cup oil- cannola or vegetable

1 2/3 cup canned pumpkin

4 eggs beaten

3 1/2 cup flour

2/3 cup water

2 tsp. baking soda

2 tsp. salt

1 tsp. baking powder

4 tsp. Pine Island Herb and Spice Pumpkin Pie Spices

Grease and flour 3-4 rinsed and cleaned tin cans or you can use 2 loaf pans , muffin tins, etc. The number of tin can you need is dependent on the size you choose.

Combine the sugar ,oil, pumpkin and eggs and beat until light and fluffy. Sift the dry ingredients together. Add the dry mix alternately with the water to the sugar mixture. Bake at 350 for 45060 minutes. Test with a tooth pick. Cool in the tin for 10 minutes then remove to a rack. these are wonderful additions to a gift baskets for a special friend at Christmas. Wrap the outside of the cans with wrapping paper and ribbon, with the pumpkin bread inside!
